Black coffee is fine, a cup of herbal tea - delicious. But I can't think of a better way to start the day than with a plant based creation that not only tastes good, but boosts immunity, energy and skin health as well!

Enter - the beetroot latte.

A vibrant, instagrammable concoction and major upgrade to your standard caffeinated beverage.

An excellent source of reparative antioxidants, beetroot is packed with potassium, manganese and folate and helps to reduce inflammation, improve circulation, support the liver and encourage healthful detoxification (essential for clear, healthy skin). What else makes this a ‘superfood’? Vitamin A, high levels of collagen building vitamin C and a crystalline compound known as betaine which helps to protect cells within the body from stress (which we can all use, amiright?).

What else makes this latte so special?

1. Collagen

The main structural protein found in skin and other connective tissues, collagen plays an essential role in the health of our skin. As collagen decreases as we age, it becomes important to maintain adequate levels (not just for skin, but for blood vessels, joints and ligaments too!).

2. Coconut oil

Coconut oil is unlike other fat sources due to the medium chain triglycerides found in it's structure. Rather than being stored, the body uses the MCT as energy, giving you balanced energy without the crash and a well functioning metabolism (yes please!).

3. Rose petals

Although often used as decor, rose petals contain small amounts of vitamin C (an essential co-factor in the production of collagen) and can help improve overall feelings of well-being. 

 

Ingredients:

1 tsp organic beetroot powder

2 tbsp boiling rose petal tea

1 cup plant based milk of choice

1 scoop collagen peptides

1 tsp coconut oil (or coconut butter)

1 tsp maple syrup (more or less to taste)

Pinch of cinnamon

Dash of vanilla extract

Directions:

Whisk the beetroot powder and boiling water together until you have a smooth paste

Add beetroot paste, milk, maple, collagen and coconut oil to blender

Top with extra frothed milk if desired, pour into a your favourite mug and enjoy!
