My mom never wanted us to buy her Mother’s day gifts. Instead she always asked me to make her a cup of her favourite masala chai. Drinking chai was a huge part of my upbringing. Any time family or friends would come over, I would prepare a pot of chai to serve alongside some sweet and spicy snacks. My family loved to gather around the deck and share stories over a cup of chai. I’m so happy to share my childhood recipe with you now for Mother’s Day. I hope you can enjoy it with your whole family.
My Mom's Favourite Masala Chai Recipe
2 green cardamom pods
1 piece of cinnamon stick
¼ teaspoon ground ginger (I use more, because I love ginger)
⅛ fresh ground black pepper
4 pieces of clove
3 cups of water
½ cup milk of choice (Alloy D Coconut Milk is quite nice)
2 black tea bags (I use Red Rose)
Sugar to taste
¼ teaspoon fennel seeds
1 piece star anise
In a mortar, crush the cardamom, clove, and cinnamon. Or use a grinder.
Transfer the crushed spices to a small saucepan, then add water, ginger, and black pepper. Bring to a boil. Remove pan from heat, cover, and steep for 5-10 minutes.
Add milk and sugar to the pan, then bring to a boil. Remove from heat and add teabag. Cover and steep for 5 minutes
Stir, strain, and enjoy!
